We will start a new menu on October 22 (Tuesday). Uzume-meshi, a traditional dish of the Iwami region centering on the Takatsu River basin, has been rearranged in the MASCOS style to pursue a delicious taste that we can confidently recommend to anyone.
At first glance, “Uzume-meshi” looks like ochazuke, a dish of rice topped with dashi broth and served with wasabi (Japanese horseradish), but it is characterized by small, chopped pieces of thai and vegetables hidden beneath the rice. There are various theories as to its origin, including that it was made to hide extravagance due to the frugal and thrifty policies of the Edo period, or because the ingredients were so crude that it was embarrassing to be seen by others. The custom of lying face down when serving or eating has also been handed down.
In 1939, Uzume-meshi was selected by the Imperial Household Agency as one of Japan's five most famous rice dishes in its nationwide survey of local cuisine. MASCOS has taken this historic dish and given it a new taste with a modern sensibility.
The new menu features the following five dishes:
- ROSY SEA BASS UZUME-MESHI
- BREAM UZUME-MESHI
- CHOPPED RAW FISH 'NAMERÔ' UZUME-MESHI
- LIMITED SEASONAL UZUME-MESHI
- MATUNAGAGYU OFFAL STEW PORRIBGE
Each menu item was prepared using rich ingredients from the Takatsu River basin, the pride of the region, and seafood from the Sea of Japan in abundance to bring out the flavor of the ingredients themselves. Uzume-meshi was served on traditional occasions such as cold winter evenings and “Harukagura” New Year's festivities. Today, it continues to be loved as a local gourmet dish that can be enjoyed at tourist facilities and events, and MASCOS BAR & DINING is committed to making this traditional dish available to everyone.
